Ingredients:
- 4 large eggs, room temperature
- 1+1/2 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 teaspoon vanilla powder or vanilla extract
- 1 teaspoon salt
- 2 teaspoon baking powder
- 4 carrots, peeled
- 1/2 cup crushed walnuts
- 1 teaspoon cinnamon
- 3-4 cup all-purpose flour,plus more for pans
- Preheat oven 350F degrees.Butter round cake pan. Dust with flour,and top out any excess.
- Stir the mixture of flour, baking powder,cinnamon, and salt.
- place eggs and sugar into a medium sized bowl, beat with hand mixer until it gets light and fluffy.
- beat the flour mixture into the carrot mixture and add the walnuts.
- Bake about 40-50 minutes, or until it tests done with toothpick.
